Easy Southwest Ranch Chicken Salad Sandwiches



This has to be the most fool proof recipe I've ever tried! It was also one of the tastiest! I came up with this one when I had too many chores left to do, but a Mr. who was going to be ready to eat dinner in 45 minutes!

Southwest Ranch Chicken Salad Sandwich recipe
 2- Skinless, boneless chicken breasts
1 bottle of Taco Bell Southwest Ranch Dressing
1/2 cup of shredded cheddar cheese
olive oil
Bread
Salt and Pepper

Directions:
Drizzle a tiny amount of olive oil on top of chicken breasts, sprinkle salt and pepper to taste. (the olive oil helps the chicken stay moist in the oven and not dry out) Cook chicken breasts in oven 350 degrees for 30-45 minutes. Make sure there isn't any pink inside! Take out & let cool 10 minutes.

Put chicken breasts in Kitchenaid Mixer to shred, or you can do this by cutting up the chicken breasts in to "shredded" pieces. Next, add 1 cup of Southwest Ranch dressing and 1/2 cup cheddar cheese to chicken pieces, stir well. Taste it at this point to see if it's enough for you. I added half the bottle to mine because I wanted a big Southwest ranch flavor, but it's totally up to you.

Spread on bread and serve! You can add lettuce, tomatoes, anything you'd like to your sandwich!


The Mr. and I loved this recipe. It was so fast and simple! I don't know how well the ranch travels, as in if you were to bring it to a picnic or for lunch outside of the refrigerator, but that's an idea!  Check out the pictures below!
